Well, because of Passover, I'm feeling inspired, so let's do something really basic.

Matzah Brie

base recipe rating 1: scrambled eggs
whip eggs with a touch of water.
saute in pan

base recipe rating 2:
saute onion prior to adding whipped eggs

base recipe rating 3:
run a board of matzah under tap water to lightly moisten, crumble into whipped eggs before pouring in pan, cook until lightly browned on one side, then flip and cook other side until lightly done

base recipe rating 4:
season uncooked side with kosher sea salt, fresh cracked peppercorn, granulated garlic, and dill weed before flipping

base recipe rating 5:
serve with apple sauce...

Weight Watchers has a lower-fat version, Menolly, using egg substitute and light butter. I just happened to see it at their website today, so I thought I'd mention it.

Of matzah brie? Cool!
But, it is nearly impossible to find kosher for passover margarine or light butter. Many brands tend to be made with soybean oil. I haven't looked at egg substitute to know what they ingredients are...

Time for another game?

I'm going to revise the rules a little bit! The basic meal is level 1. Take any part of it you like and make a suggestion to spectacularise it, giving your suggestion a rating up to 5 (spectacular), for that particular bit.

At the end, we'll take the highest scoring suggestions and put them together to make the ultimate spectacular dinner! So instead of a competition, it's more like a co-operative. Does that make sense?

This is based, naturally, on the Christmas dinner I made this year!

What we will end up with on the plate.....

Roast pork and crackling.
Roast beef
Roast potatoes
Roast carrots
Roast parsnips
Roast shallots
Brussel sprouts
Broccoli
Mini Yorkshire puddings
Sage and onion stuffing

Level 1 (simple) descriptions - Meat is unwrapped and roasted straight out of pack. Roasted veg are done in oil. Sprouts and Broccholi are boiled. Yorkies and stuffing are store bought.

Roast pork and crackling: Just cut the skin (diamond shaped or rhombic). Place the the meat skinside down in a flat bowl with a bit of water to let the skin soak for a while. During the cooking process the water in the skin will evaporate and sort help the crakling to rise and get all crispy without getting tough as leather (a bit like puff pastry).

Roast potatoes: slightly pre-cooked, cut to wedges, roasted on a baking tray with olive oil, garlic, a bay leave, sage leaves, twig of rosemary, onions, lemon wedges and sea salt.

Broccoli: Remove rogue "h" from the vegatble. Then heat a knob of butter, put in same almnond flakes and let them carefully brown. Add cooked broccoli florets, toss in the butter and season with salt, a hint of sugar and fresh nutmeg. Works fro the Brussel sprouts as well, however a a few freshly grated truffle flakes would be perfect as well (as long as it's top quality truffle)

The roast veggies could use a dash of dry sherry.
