Yesterday we cooked a Goose for dinner. It was pretty good. Kind of like duck but the flavor isn't as strong/bold. We got it on sale (50% off) or we wouldnt have tried it. Goose around here is about $55 each for a whole goose.

Hope you saved all the fat for your chips/roast potatoes...... It makes great dripping for cooking and will keep in the freezer for a good while. Smile

Simplest thing on earth to make. (Well, except for my grandmother's chocolate mousse.) Very Happy

Put 3 tablespoons of water, 1 tablespoon of lemon juice, and 1 tablespoon castor sugar in a pot and bring to a boil.

Quarter 5-6 large Granny Smith apples, and remove the pips (but not the peel), and add to boiling liquid.

Leave on high heat for 3-4 mins, then reduce to lowest heat and leave simmering until the apples are soft. (Really soft.)

Once soft, run them through a moulie to get rid of the peels.

And that's it. I actually eat it as part of the meal (I like to salt mine, but not everybody does) rather than simply as a sauce.

(If you don't have a moulie, you may need to peel the quarters as well, but I feel this compromises the flavour.)

Actually I agree with you there Av - Mrs P has the caramel sauce: I have a bit, but add lemon juice and sugar on top. Now cinnamon I'm not so sure about .......

Cinnamon, definitely. Never tried lemon. I like caramel, though not necessarily on pancakes. Too sweet. I don't usually even use maple syrup, though I like maple.

A favorite breakfast of mine is an oven baked Dutch Baby pancake.. Slather butter on it, sprinkle confectioners sugar, and then squeeze lemon juice so the powdered sugar is dissolved.

What? You can't have pancakes without it. I like to grind some cinnamon bark fine and mix it with the sugar for them, but the powdered kind works just as well.

Last night was cold roast beef and dripping sandwiches. Very Happy

Night before was roast beef, spuds and gem squash.

Night before that was toasted English Muffins, spread with nutella and covered with sliced strawberries, cinnamon and nutmeg. (Was lazy.)
