The Galley's Index of Recipes

There are vegetarian recipes scattered throughout, but in particular scroll down to Entrees>Vegan and Entrees>Vegetarian. We have some excellent cooks right here on the Watch!

Some of my own favorites are:

African Vegetarian Stew (even though I am sure Av and deer would argue with the title)
Grilled Tofu Satay
Sloppy Lentils (and that's the first recipe in a thread here in the Galley devoted to vegetarian recipes)
Mixed Mushroom Stew
Mushroom Stroganoff
Chili Relleņo Casserole

...etc., etc., etc...

Really, the hard part is getting the damn vegetarians to stay in the pot while they're cooking. For a bunch of meat-starved beanpoles, they can put up a pretty zesty fight. Then, of course, there's the whole issue of what that sudden rush of their adrenalin does to the flavor of their meat.

So usually I try to take them by surprise. Chloroform and ether can sometimes work fast enough, but if you're trying to eat healthy (and if you are specifically looking for recipes for vegetarians then I'll assume you are), then you don't want those nasty chemicals in your meal. Since most cities have very strict ordinances on discharging firearms, guns are right out, not to mention there's the hassle of having to track them if you don't get a good kill shot.

So the best way that I've found (and I'm always open to other suggestions) is to get 'em while they're sleeping and go for the quick kill (knife to the base of the skull severing the spinal cord works very well). This of course adds the complication of having to transport the vegetarian back to your kitchen, but with a little prior planning, the inconvenience can be minimized.

As far as recipes, I find that (as with most meats) slow cooking in a Crock Pot with some Worcestershire Sauce, red wine (Merlot is fine), black pepper, potatoes, carrots, and onions will yield great results.

I just had huevos rancheros for breakfast this morning... Very Happy

...no danlo, they didn't compare to what I had in Albuquerque...
(no huevos rancheros will compare to the ones I had in Albuquerque)
but for Gator Town, they were pretty good.

I made an awesome eggplant lasagna last night. It's easy, but takes just a tad bit of work:

You'll need some pasta sauce (homemade or canned), shredded mozzarella cheese (or sliced if it's fresh), about 3-4 eggplants and some olive oil.

Slice the eggplants lengthwise so they fit in a baking dish. Brush each slice generously with olive oil on both sides and season with salt and pepper. Grill each slice about 2-3 minutes each side, or until golden brown and slightly soft.

Layer your baking dish as such: sauce, eggplant and cheese. Top with some parmesan cheese and stick it in the oven until the cheese is bubbly and slightly brown on top, about 15-25 minutes.
